I would avoid any lo oil/hi poly, unless you want it glossy.
To get some depth and glow in that grain, try this:
Wipe it down with denatured alcohol to pull out the dirt and clear out the surface oil, then use some Maloof oil/wax:http://www.amazon.com/Rockler-Sam-Maloof-Finish-Quart/dp/B001DSY6UI
It has no poly, so finishes easy, plus you can re-apply from time to time like BLO and maintain a nice satin finish, like the Finns used.
The Maloof Oil/poly will finish to a shine, but the stored oil/poly begins to gel if not sealed, and their can is not good for resealing.
